Morocco is famous for its olive oil. This olive oil is from Beni Mellal which is renowned for its rich, delicious and unique olive oil. The oil is extracted from the Bakry Olive.

The olive trees grow in Beni Mellal where no chemicals or pesticides are used. The olive trees are watered and they also rely on rainwater.

The olives harvest once a year in November. The olives are collected and go through three processes before being pressed. First, any twigs and leaves are removed. Then the olives are washed with water and finally dried.

Modern machines which use traditional methods are used to extract the oil by pressing the olives with the seeds using stones. In the past, animals were used to rotate the machines. However, nowadays machines are powered by electricity. No heat is applied to extract the oil.

Because the olives are cold-pressed with the seed, the oil contains the additional health benefits of the seed oil and makes this olive oil unique in its taste and benefits.

This traditional process has been passed down from generation to generation. This careful, traditional process combined with organic farming practice is reflected in the rich and unique flavour of the olive oil.
